This is a basic recipe for making sushi rice, perfect for sushi rolls and nigiri.

- 2 cups sushi rice short-grain
- 2 cups water
- ⅓ cup rice vinegar
- 3 tablespoon sugar
- 1.5 teaspoon salt
Rinse the sushi rice under cold water until the water runs clear.
Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
In a small saucepan, combine the rice vinegar, sugar, and salt. Cook over medium heat until the sugar and salt have dissolved. Do not boil.
Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature before using.
