Ingredients

  • 2 cups sushi rice short-grain
  • 2 cups water
  • cup rice vinegar
  • 3 tablespoon sugar
  • 1.5 teaspoon salt

Instructions 

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
  3. In a small saucepan, combine the rice vinegar, sugar, and salt. Cook over medium heat until the sugar and salt have dissolved. Do not boil.
  4. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature before using.
