Ingredients

  • 2 cups grated squash
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 eggs beaten
  • ¼ cup milk
  • ¼ cup chopped green onions
  • ¼ cup grated Parmesan cheese
  • 2 tablespoon olive oil for frying

Instructions 

  1. 1. In a large mixing bowl, combine the grated squash, flour, baking powder, salt, and black pepper.
  2. 2. Add the beaten eggs, milk, green onions, and Parmesan cheese to the bowl. Mix until well combined.
  3. 3. Heat the olive oil in a frying pan over medium heat.
  4. 4. Drop spoonfuls of the squash mixture into the pan, flattening them slightly with the back of the spoon.
  5. 5. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  6. 6. Remove from the pan and drain on paper towels. Serve warm.
