Spaghetti Cacio e Pepe

Ingredients

  • 400 g spaghetti
  • 200 g Pecorino Romano cheese finely grated
  • 2 teaspoon black pepper freshly ground
  • to taste salt

Instructions 

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet over medium heat, toast the black pepper for about 1 minute.
  3. Add the cooked spaghetti to the skillet along with ½ cup of the reserved pasta water. Toss to combine.
  4. Remove from heat and add the grated Pecorino Romano cheese. Toss quickly to combine, adding more pasta water if needed to create a creamy sauce.
  5. Serve immediately, garnished with additional cheese and black pepper if desired.
