  • 3 lb Beef Chuck Roast
  • 1 cup Beef Broth
  • 4 cloves Garlic minced
  • 1 large Onion sliced
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned.
  2. 2. Place the roast in the slow cooker. Add beef broth, garlic, onion, carrots, and potatoes.
  3. 3. Season with salt, pepper, and thyme. Cover and cook on low for 8 hours or until the meat is tender.
