Roasted Vegetable Quinoa Salad Recipe
A delicious and healthy salad with roasted vegetables and quinoa.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup zucchini diced
- 1 cup bell pepper diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup feta cheese crumbled
- 2 tablespoons fresh parsley chopped
Preheat oven to 400°F (200°C).
Place cherry tomatoes, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes.
While vegetables are roasting, cook quinoa. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
Fluff quinoa with a fork and let it cool.
In a large mixing bowl, combine roasted vegetables, quinoa, feta cheese, and fresh parsley. Toss to combine.
Serve warm or chilled.
