Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini diced
  • 1 cup bell pepper diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes.
  3. While vegetables are roasting, cook quinoa. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large mixing bowl, combine roasted vegetables, quinoa, feta cheese, and fresh parsley. Toss to combine.
  6. Serve warm or chilled.
