Ingredients

  • 1 whole garlic bulb roasted
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes.
  3. Once roasted, squeeze the garlic cloves out of their skins into a bowl.
  4. Add mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the bowl. Whisk until smooth.
  5. Serve immediately or refrigerate for later use.
