- 3 pounds Eye of Round Roast
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper freshly ground
- 2 cloves Garlic minced
Preheat your oven to 450°F (230°C).
Rub the roast with olive oil, salt, pepper, and minced garlic.
Place the roast in a roasting pan and put it in the oven.
Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (165°C) and continue roasting for about 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
