  • 2 large Eggplants sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants into ¼ inch thick rounds.
  3. Place the eggplant slices on a baking sheet and brush both sides with olive oil.
  4. Sprinkle with salt and black pepper.
  5. Bake for 25-30 minutes, turning halfway through, until golden brown.
