  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Sugar
  • 2 Eggs beaten
  • 1 cup Grated cucumber drained
  • ½ cup Chopped nuts walnuts or pecans
  • ½ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, combine flour, baking soda, baking powder, and salt.
  3. In another bowl, mix sugar, eggs, grated cucumber, chopped nuts, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
