Corn Truffle Huitlacoche Quesadillas
A delicious and unique quesadilla recipe featuring huitlacoche, also known as corn truffle.

Main Ingredients
- 8 pieces Corn tortillas
- 1 cup Huitlacoche (corn truffle) canned or fresh
- 1 cup Shredded cheese Oaxaca or mozzarella
- 1 tablespoon Butter
- 1 tablespoon Olive oil
1. Heat a skillet over medium heat and add butter and olive oil.
2. Add huitlacoche to the skillet and cook for 5 minutes.
3. Place a tortilla in the skillet, add cheese and cooked huitlacoche, then top with another tortilla.
4. Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
5. Repeat with remaining tortillas and filling.
6. Cut into wedges and serve hot.
