Instructions
Preheat your oven to 375°F (190°C).
Lay the beef flank steak flat on a cutting board and pound it with a rolling pin to flatten it out.
Spread the spinach evenly over the steak, then sprinkle the mozzarella cheese on top.
Roll the steak up tightly and secure it with kitchen twine.
Brush the rolled steak with olive oil and season with salt and black pepper.
Place the steak on a baking sheet and bake for 30 minutes, or until the beef is cooked to your liking.
Remove from the oven and let it rest for 5 minutes before slicing into pinwheels.
