  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 eggs beaten
  • 2 teaspoons vanilla extract
  • 2 cups zucchini grated
  • 1 cup crushed pineapple drained

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, beat together sugar, oil, eggs, and vanilla. Stir in zucchini and pineapple.
  4. Gradually stir flour mixture into zucchini mixture until just combined. Pour batter into prepared pan.
  5. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack to cool completely.
