  • 4 medium zucchinis spiralized
  • 2 cups fresh basil leaves
  • ½ cup grated Parmesan cheese
  • ½ cup pine nuts toasted
  • 2 cloves garlic minced
  • ½ cup extra-virgin olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchinis and set them aside.
  2. 2. In a blender, combine basil, Parmesan, pine nuts, and garlic. Blend until smooth.
  3. 3. Gradually add olive oil while blending until the mixture is well combined. Season with salt and pepper.
  4. 4. Heat a skillet over medium heat. Add the zucchini noodles and cook for 2-3 minutes until slightly tender.
  5. 5. Toss the zucchini noodles with the pesto sauce until well coated. Serve immediately.
