Zucchini Noodles With Pesto
Light and fresh zucchini noodles tossed with homemade pesto.

Main Ingredients
- 4 medium zucchinis spiralized
- 2 cups fresh basil leaves
- ½ cup grated Parmesan cheese
- ½ cup pine nuts toasted
- 2 cloves garlic minced
- ½ cup extra-virgin olive oil
- to taste salt and pepper
1. Spiralize the zucchinis and set them aside.
2. In a blender, combine basil, Parmesan, pine nuts, and garlic. Blend until smooth.
3. Gradually add olive oil while blending until the mixture is well combined. Season with salt and pepper.
4. Heat a skillet over medium heat. Add the zucchini noodles and cook for 2-3 minutes until slightly tender.
5. Toss the zucchini noodles with the pesto sauce until well coated. Serve immediately.
