- 2 medium Zucchini grated
- 1 teaspoon Salt
- ½ cup All-purpose flour
- 1 large Egg beaten
- ¼ cup Green onions chopped
- ¼ cup Parmesan cheese grated
- 2 tablespoon Olive oil for frying
Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes.
Squeeze out the excess moisture from the zucchini using a clean kitchen towel.
In a large bowl, combine the zucchini, flour, beaten egg, green onions, and Parmesan cheese. Mix well.
Heat olive oil in a frying pan over medium heat. Scoop spoonfuls of the mixture into the pan and flatten them into fritters.
Cook for about 2-3 minutes on each side, or until golden brown and crispy.
Drain on paper towels and serve warm.
