Ingredients

  • 2 medium Zucchini grated
  • 1 teaspoon Salt
  • ½ cup All-purpose flour
  • 1 large Egg beaten
  • ¼ cup Green onions chopped
  • ¼ cup Parmesan cheese grated
  • 2 tablespoon Olive oil for frying

Instructions 

  1. Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes.
  2. Squeeze out the excess moisture from the zucchini using a clean kitchen towel.
  3. In a large bowl, combine the zucchini, flour, beaten egg, green onions, and Parmesan cheese. Mix well.
  4. Heat olive oil in a frying pan over medium heat. Scoop spoonfuls of the mixture into the pan and flatten them into fritters.
  5. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Drain on paper towels and serve warm.
