Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, oil, vanilla, and sugar together until well combined.
  4. Stir the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Fold in the grated zucchini.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
