  • 4 zucchinis medium-sized
  • 1 cup quinoa cooked
  • 1 cup cherry tomatoes halved
  • ½ cup mozzarella cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a mixing bowl, combine cooked quinoa, cherry tomatoes, mozzarella cheese, olive oil, salt, and black pepper.
  4. Stuff the zucchini boats with the quinoa mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25 minutes.
  6. Serve warm and enjoy!
