  • 2 medium zucchinis sliced into rounds
  • 1 cup bread crumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine bread crumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  3. Dip zucchini rounds in olive oil, then coat with bread crumb mixture.
  4. Place coated zucchini rounds on a baking sheet.
  5. Bake for 15 minutes or until golden brown.
  6. Season with salt and pepper to taste. Serve warm.
