Ingredients

  • 2 lbs yuca (cassava) peeled and cut into thick fries
  • 1 teaspoon salt for boiling water
  • 2 cups vegetable oil for frying

Instructions 

  1. 1. Peel the yuca and cut it into thick fries.
  2. 2. In a large pot, bring water to a boil and add 1 teaspoon of salt.
  3. 3. Add the yuca to the boiling water and cook until tender, about 10-15 minutes.
  4. 4. Drain the yuca and let it cool slightly.
  5. 5. Heat the vegetable oil in a frying pan over medium-high heat.
  6. 6. Fry the yuca in batches until golden and crispy, about 3-5 minutes per batch.
  7. 7. Use a slotted spoon to transfer the fried yuca to a plate lined with paper towels to drain excess oil.
  8. 8. Season with salt to taste and serve immediately.
