- 1 tablespoon Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 lb Chicken Breast, cooked and shredded
- 2 cans Great Northern Beans, drained and rinsed
- 1 can Corn, drained
- 2 cups Chicken Broth
- 1 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ½ cup Sour Cream
- ¼ cup Cilantro, chopped
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add shredded chicken, beans, corn, chicken broth, cumin, oregano, chili powder, salt, and black pepper. Stir to combine.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in sour cream and chopped cilantro just before serving.
