Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 2 cans Great Northern Beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ cup Sour Cream
  • ¼ cup Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add shredded chicken, beans, corn, chicken broth, cumin, oregano, chili powder, salt, and black pepper. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in sour cream and chopped cilantro just before serving.
