Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 lb Chicken breast, diced
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans White beans, drained and rinsed
  • 4 cups Chicken broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Chili powder
  • 1 cup Corn kernels
  • 1 Salt and pepper to taste

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add the chopped onion and minced garlic, and cook until softened.
  4. Add the white beans, chicken broth, cumin, oregano, and chili powder. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the corn kernels and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.
