Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 medium Sweet Potato, peeled and cubed
  • 1 cup Crushed Tomatoes
  • 4 cups Vegetable Broth
  • ½ cup Peanut Butter
  • 1 bunch Collard Greens, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened.
  2. Add the garlic and ginger, cooking for another minute.
  3. Stir in the sweet potato, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 15 minutes.
  4. Mix in the peanut butter until well combined. Add the collard greens and cook until wilted, about 5 minutes.
  5. Season with salt and pepper to taste. Serve hot.
