  • 1 cup Cucumber, diced
  • ¼ cup Red onion, finely chopped
  • 1 Jalapeño, seeded and minced
  • ¼ cup Fresh cilantro, chopped
  • 2 tablespoon Lime juice
  • ½ teaspoon Salt

Instructions 

  1. In a large mixing bowl, combine the diced watermelon, cucumber, red onion, jalapeño, and cilantro.
  2. Add the lime juice and salt. Toss gently to combine.
  3. Serve immediately or refrigerate for up to 2 hours before serving.
