- 3 cups Watermelon, diced
- 1 cup Cucumber, diced
- ¼ cup Red onion, finely chopped
- 1 Jalapeño, seeded and minced
- ¼ cup Fresh cilantro, chopped
- 2 tablespoon Lime juice
- ½ teaspoon Salt
In a large mixing bowl, combine the diced watermelon, cucumber, red onion, jalapeño, and cilantro.
Add the lime juice and salt. Toss gently to combine.
Serve immediately or refrigerate for up to 2 hours before serving.
