  • 4 large carrots peeled and cut into sticks
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon peppercorns
  • 2 cloves garlic smashed

Instructions 

  1. In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil.
  2. Place carrots, mustard seeds, peppercorns, and garlic in a jar.
  3. Pour the hot vinegar mixture over the carrots. Let cool to room temperature, then refrigerate.
