Main Ingredients
- 8 pieces Rice paper wrappers
- ½ lb Shrimp, cooked and halved
- 1 cup Lettuce, shredded
- ½ cup Carrots, julienned
- ½ cup Cucumber, julienned
- ¼ cup Fresh mint leaves
- ¼ cup Fresh cilantro leaves
1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften.
2. Lay the softened wrapper flat on a cutting board. In a row across the center, place a few shrimp halves, a handful of lettuce, carrots, cucumber, mint, and cilantro.
3. Fold the sides inward, then tightly roll the wrapper, starting from the bottom.
4. Repeat with the remaining ingredients. Serve with your favorite dipping sauce.
