- 200 g vermicelli noodles dried
- 1 cup shredded carrots
- 1 cup cucumber julienned
- 1 cup bean sprouts
- ½ cup fresh herbs mint, basil, cilantro
- ¼ cup crushed peanuts
- ¼ cup fish sauce for dressing
- 2 tablespoon lime juice freshly squeezed
- 1 tablespoon sugar
- 1 clove garlic minced
- 1 chili red chili sliced
1. Cook vermicelli noodles according to package instructions. Drain and rinse under cold water.
2. In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and sliced red chili to make the dressing.
3. In a large bowl, mix the cooked noodles with shredded carrots, julienned cucumber, bean sprouts, and fresh herbs.
4. Pour the dressing over the noodle mixture and toss well to combine.
5. Serve the noodle bowl topped with crushed peanuts.
