Ingredients 

Main Ingredients

  • 5 lb Venison ground
  • 2 lb Pork Fat ground
  • 2 tablespoon Salt
  • 1 tablespoon Black Pepper cracked
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Mustard Seed
  • 1 teaspoon Cure #1
  • 1 cup Ice Water

Instructions 

  1. 1. Grind the venison and pork fat together.
  2. 2. Mix in all the spices and cure #1.
  3. 3. Add the ice water and mix until well combined.
  4. 4. Stuff the mixture into sausage casings.
  5. 5. Smoke the sausages at 180°F for 4 hours.
  6. 6. Let the sausages cool before slicing and serving.
