Venison Summer Sausage Recipe

Main Ingredients
- 5 lb Venison ground
- 2 lb Pork Fat ground
- 2 tablespoon Salt
- 1 tablespoon Black Pepper cracked
- 1 tablespoon Garlic Powder
- 1 tablespoon Mustard Seed
- 1 teaspoon Cure #1
- 1 cup Ice Water
1. Grind the venison and pork fat together.
2. Mix in all the spices and cure #1.
3. Add the ice water and mix until well combined.
4. Stuff the mixture into sausage casings.
5. Smoke the sausages at 180°F for 4 hours.
6. Let the sausages cool before slicing and serving.
