Vegetarian Stuffed Peppers
Delicious and healthy stuffed peppers filled with a mix of rice, beans, and veggies.

Main Ingredients
- 4 bell peppers tops cut off and seeds removed
- 1 cup cooked rice
- 1 cup black beans rinsed and drained
- 1 cup corn kernels fresh or frozen
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese optional
- to taste salt and pepper
Preheat oven to 375°F (190°C).
In a large mixing bowl, combine cooked rice, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
Stuff each bell pepper with the rice mixture and place in a baking dish.
Top with shredded cheese if using.
Bake for 40-45 minutes, until peppers are tender.
Serve hot.
