Ingredients 

Main Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup cooked rice
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese optional
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked rice, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
  3. Stuff each bell pepper with the rice mixture and place in a baking dish.
  4. Top with shredded cheese if using.
  5. Bake for 40-45 minutes, until peppers are tender.
  6. Serve hot.
