  • 4 bell peppers tops cut off and seeds removed
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, cumin, and chili powder.
  3. Stuff each bell pepper with the rice mixture and place them in a baking dish.
  4. Top each stuffed pepper with shredded cheese.
  5. Bake in the preheated oven for 45 minutes, or until the peppers are tender and the cheese is melted and bubbly.
