Ingredients

  • 4 pieces Flour tortillas
  • 1 cup Shredded cheese cheddar or a mix
  • 1 cup Black beans cooked
  • 1 cup Corn kernels cooked
  • 1 cup Bell peppers diced
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Place one tortilla in the skillet and sprinkle with cheese, black beans, corn, and bell peppers.
  3. 3. Top with another tortilla and cook until the bottom tortilla is golden brown, about 2-3 minutes.
  4. 4. Flip the quesadilla and cook until the other side is golden brown and the cheese is melted, another 2-3 minutes.
  5. 5. Remove from the skillet and cut into wedges. Repeat with the remaining tortillas and fillings.
