Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 1 cup Corn Kernels
- 2 cans Diced Tomatoes
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Vegetable Broth
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and chopped bell pepper, cook for another 5 minutes.
4. Add corn, diced tomatoes, black beans, kidney beans, chili powder, cumin, paprika, salt, and black pepper. Stir well.
5. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for 30 minutes, stirring occasionally.
6. Adjust seasoning if needed and serve hot.
