Main Ingredients
- 1 can Chickpeas drained and rinsed
- ¼ cup Mayonnaise
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dijon Mustard
- 1 stalk Celery finely chopped
- 2 tablespoon Red Onion finely chopped
- 1 tablespoon Parsley chopped
- to taste Salt and Pepper
1. In a mixing bowl, mash the chickpeas with a fork or potato masher until chunky.
2. Add the mayonnaise, lemon juice, Dijon mustard, celery, red onion, and parsley. Mix well.
3. Season with salt and pepper to taste.
4. Serve on bread, in a wrap, or with crackers.
