Ingredients 

Tempura Batter

  • 1 cup All-purpose flour
  • 1 cup Cold water
  • 1 large Egg beaten

Vegetables

  • 1 medium Carrot cut into thin strips
  • 1 medium Zucchini cut into thin strips
  • 1 medium Sweet potato cut into thin strips

Sushi Roll

  • 2 cups Sushi rice cooked and seasoned
  • 4 sheets Nori

Instructions 

  1. 1. Prepare the tempura batter by mixing the flour, cold water, and beaten egg in a bowl. Do not overmix.
  2. 2. Heat oil in a deep fryer to 350°F (175°C).
  3. 3. Dip the vegetable strips into the tempura batter and fry until golden and crispy. Drain on paper towels.
  4. 4. Place a sheet of nori on a sushi mat. Spread an even layer of sushi rice over the nori.
  5. 5. Arrange the tempura vegetables in a line along the bottom edge of the nori.
  6. 6. Roll the sushi tightly using the mat, then slice into pieces with a sharp knife.
