Vegetable Stew Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, sliced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the carrots, potatoes, and celery. Cook for about 5 minutes, stirring occasionally.
Pour in the vegetable broth and diced tomatoes. Add the thyme and rosemary.
Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
Season with salt and pepper to taste before serving.
