Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, sliced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the carrots, potatoes, and celery. Cook for about 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and diced tomatoes. Add the thyme and rosemary.
  6. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  7. Season with salt and pepper to taste before serving.
