Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 2 cups Chopped Carrots
  • 2 cups Chopped Celery
  • 1 cup Chopped Zucchini
  • 1 cup Chopped Green Beans
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion and garlic, cook until softened.
  3. 3. Add carrots, celery, zucchini, and green beans. Cook for 5 minutes.
  4. 4. Stir in diced tomatoes, vegetable broth, thyme, and basil.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
