Ingredients 

Main Ingredients

  • 2 pcs Eggplants sliced
  • 3 pcs Zucchinis sliced
  • 2 pcs Potatoes sliced
  • 1 pcs Onion chopped
  • 3 cloves Garlic minced
  • 400 g Tomato sauce
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • to taste Salt and pepper
  • 100 g Grated cheese

Bechamel Sauce

  • 50 g Butter
  • 50 g Flour
  • 500 ml Milk
  • to taste Nutmeg grated

Instructions 

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplants, zucchinis, and potatoes. Fry them in a pan until golden brown. Set aside.
  3. In a saucepan, sauté the chopped onion and minced garlic until soft. Add the tomato sauce, dried oregano, and dried basil. Season with salt and pepper. Let it simmer for 10 minutes.
  4. In another saucepan, melt the butter and add the flour to make a roux. Gradually add the milk, stirring continuously until the sauce thickens. Season with salt, pepper, and grated nutmeg.
  5. In a baking dish, layer the fried vegetables and tomato sauce. Pour the béchamel sauce on top and sprinkle with grated cheese.
  6. Bake in the preheated oven for 45 minutes or until the top is golden brown.
