Ingredients 

Main Ingredients

  • 1 cup Grated Zucchini
  • 1 cup Grated Carrot
  • ½ cup Chopped Onion
  • ½ cup All-Purpose Flour
  • 2 units Eggs
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Chopped Fresh Parsley
  • 2 tablespoon Olive Oil for frying

Instructions 

  1. 1. In a large mixing bowl, combine grated zucchini, grated carrot, and chopped onion.
  2. 2. Add the flour, eggs, salt, pepper, and parsley. Mix well until combined.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Scoop spoonfuls of the mixture into the pan, flattening them slightly with the back of the spoon.
  5. 5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. 6. Remove from the pan and drain on paper towels. Serve warm.
