Vegetable Fritters Recipe

Main Ingredients
- 1 cup Grated Zucchini
- 1 cup Grated Carrot
- ½ cup Chopped Onion
- ½ cup All-Purpose Flour
- 2 units Eggs
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Chopped Fresh Parsley
- 2 tablespoon Olive Oil for frying
1. In a large mixing bowl, combine grated zucchini, grated carrot, and chopped onion.
2. Add the flour, eggs, salt, pepper, and parsley. Mix well until combined.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop spoonfuls of the mixture into the pan, flattening them slightly with the back of the spoon.
5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
6. Remove from the pan and drain on paper towels. Serve warm.
