Ingredients

  • 6 eggs
  • 1 cup milk
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 onion, diced
  • 1 cup spinach, chopped
  • ½ cup cheese, shredded
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, whisk together eggs and milk. Season with salt and pepper.
  3. Heat an oven-safe skillet over medium heat. Add diced bell pepper, zucchini, and onion. Cook until softened, about 5 minutes.
  4. Add spinach to the skillet and cook until wilted, about 2 minutes.
  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle shredded cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is golden brown.
  7. Remove from oven and let cool slightly before slicing and serving.
