Ingredients 

Main Ingredients

  • 2 cups Basmati Rice rinsed and soaked for 30 minutes
  • 1 cup Mixed Vegetables carrots, peas, beans, and potatoes
  • 2 tablespoon Ghee or Oil
  • 1 large Onion thinly sliced
  • 2 cloves Garlic minced
  • 1 inch Ginger minced
  • 2 cups Water
  • to taste Salt
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Garam Masala
  • 1 cup Yogurt optional
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. 2. Add sliced onions and sauté until golden brown. Add minced garlic and ginger, and sauté for another minute.
  3. 3. Add mixed vegetables and cook for 5 minutes. Add turmeric powder, garam masala, and salt. Mix well.
  4. 4. Drain the soaked rice and add it to the pot. Stir gently to mix with the vegetables and spices.
  5. 5. Add water and bring to a boil. Reduce heat to low, cover, and cook for 20-25 minutes until rice is cooked and water is absorbed.
  6. 6. Turn off the heat and let it sit covered for 10 minutes. Fluff the rice with a fork.
  7. 7. Garnish with chopped cilantro and serve hot. Optionally, serve with yogurt on the side.
