Main Ingredients
- 2 cups mushrooms, finely chopped
- 1 cup tomatoes, diced
- 1 cup red onion, finely chopped
- 1 cup cilantro, chopped
- 1 cup lime juice
- 1 teaspoon salt
- 1 teaspoon black pepper
1. In a large mixing bowl, combine the chopped mushrooms, tomatoes, red onion, and cilantro.
2. Pour the lime juice over the mixture and stir well to combine.
3. Season with salt and black pepper to taste.
4. Let the ceviche sit for about 10 minutes to allow the flavors to meld together.
5. Serve chilled with tortilla chips or on its own.
