Ukrainian Red Borscht Soup Recipe
A traditional Ukrainian beet soup that's hearty and delicious.

Main Ingredients
- 2 cups Beets, peeled and shredded
- 1 cup Carrots, peeled and shredded
- 1 cup Potatoes, peeled and cubed
- 1 cup Cabbage, shredded
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 6 cups Beef or vegetable broth
- 2 tablespoon Tomato paste
- 2 tablespoon Lemon juice
- to taste Salt and pepper
- to serve Sour cream and fresh dill
1. In a large pot, bring the broth to a boil.
2. Add the beets, carrots, and potatoes. Cook for about 15 minutes.
3. Add the cabbage, onion, and garlic. Cook for another 10 minutes.
4. Stir in the tomato paste and lemon juice. Season with salt and pepper to taste.
5. Reduce heat and simmer for about 30 minutes, until vegetables are tender.
6. Serve hot, garnished with a dollop of sour cream and fresh dill.
