Ingredients 

Brine Ingredients

  • 1 gallon water
  • 1 cup kosher salt
  • ½ cup brown sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 tablespoon crushed red pepper flakes
  • 4 cloves garlic, minced
  • 1 gallon iced water

Instructions 

  1. 1. Combine all ingredients except iced water in a large pot. Bring to a boil, stirring occasionally to dissolve the salt and sugar.
  2. 2. Remove from heat and let cool to room temperature. Refrigerate until thoroughly chilled.
  3. 3. When the brine is cold, pour it into a container large enough to hold your turkey. Add the iced water.
  4. 4. Submerge the turkey in the brine. Refrigerate for 12 to 24 hours.
  5. 5. Remove the turkey from the brine, rinse it under cold water, and pat dry. Cook as desired.
