  • 1 kg small onions peeled
  • 500 ml malt vinegar
  • 100 g sugar
  • 1 tablespoon salt
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns

Instructions 

  1. 1. Place the peeled onions in a large bowl and sprinkle with salt. Cover and leave overnight.
  2. 2. Rinse the onions thoroughly and drain well.
  3. 3. In a saucepan, combine the vinegar, sugar, mustard seeds, and peppercorns. Bring to a boil, then simmer for 5 minutes.
  4. 4. Pack the onions into sterilized jars and pour the hot vinegar mixture over them, ensuring the onions are completely covered.
  5. 5. Seal the jars and leave to cool. Store in a cool, dark place for at least 24 hours before eating.
