Ingredients

  • 1 pound bacon diced
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1.5 pounds tomatoes diced
  • ½ cup brown sugar
  • ¼ cup apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Cook the diced bacon in a large skillet over medium heat until crispy. Remove bacon and set aside, leaving the fat in the skillet.
  2. Add the diced onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add the diced tomatoes, brown sugar, apple cider vinegar, salt, and black pepper. Stir to combine.
  4. Reduce heat to low and simmer for about 45 minutes, stirring occasionally, until the mixture thickens to a jam-like consistency.
  5. Stir the cooked bacon back into the mixture and cook for another 5 minutes. Remove from heat and let cool before serving.
