  • 1 lb Tomatillos, husked and rinsed
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Cilantro, chopped
  • 1 medium Jalapeño, seeded and chopped
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatillos on a baking sheet and roast for 10 minutes, or until they are soft and slightly charred.
  3. In a blender, combine the roasted tomatillos, onion, garlic, cilantro, jalapeño, lime juice, and salt. Blend until smooth.
  4. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for later use.
