Main Ingredients
- 4 cups Chicken broth
- 1 cup Shrimp peeled and deveined
- 1 cup Mushrooms sliced
- 2 stalks Lemongrass cut into 1-inch pieces
- 3 slices Galangal
- 3 leaves Kaffir lime leaves torn
- 2 tablespoons Fish sauce
- 1 tablespoon Lime juice
- 1 teaspoon Sugar
- 2 tablespoons Thai chili paste
- 1 cup Cherry tomatoes halved
- 1 handful Cilantro chopped
1. Bring the chicken broth to a boil in a pot.
2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add mushrooms and shrimp. Cook until shrimp is pink.
4. Stir in fish sauce, lime juice, sugar, and chili paste.
5. Add cherry tomatoes and cook for another 2 minutes.
6. Garnish with cilantro and serve hot.
