Ingredients 

Main Ingredients

  • 4 cups Chicken broth
  • 1 cup Shrimp peeled and deveined
  • 1 cup Mushrooms sliced
  • 2 stalks Lemongrass cut into 1-inch pieces
  • 3 slices Galangal
  • 3 leaves Kaffir lime leaves torn
  • 2 tablespoons Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 2 tablespoons Thai chili paste
  • 1 cup Cherry tomatoes halved
  • 1 handful Cilantro chopped

Instructions 

  1. 1. Bring the chicken broth to a boil in a pot.
  2. 2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. 3. Add mushrooms and shrimp. Cook until shrimp is pink.
  4. 4. Stir in fish sauce, lime juice, sugar, and chili paste.
  5. 5. Add cherry tomatoes and cook for another 2 minutes.
  6. 6. Garnish with cilantro and serve hot.
