Instructions
Press tofu to remove excess water, then cut into cubes.
Heat olive oil in a pan over medium heat. Add tofu cubes and cook until golden brown, about 5 minutes.
In a large bowl, combine mixed greens, cherry tomatoes, red onion, and cucumber.
Add cooked tofu to the salad.
In a small bowl, whisk together soy sauce, lemon juice, salt, and pepper.
Drizzle dressing over the salad and toss to combine.
