Ingredients 

Main Ingredients

  • 1 block firm tofu pressed and cubed
  • 2 cups mixed greens
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup cucumber sliced
  • 2 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Press tofu to remove excess water, then cut into cubes.
  2. Heat olive oil in a pan over medium heat. Add tofu cubes and cook until golden brown, about 5 minutes.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and cucumber.
  4. Add cooked tofu to the salad.
  5. In a small bowl, whisk together soy sauce, lemon juice, salt, and pepper.
  6. Drizzle dressing over the salad and toss to combine.
