Ingredients 

Main Ingredients

  • 1 cup Gruyere cheese, shredded
  • 1 cup Emmental cheese, shredded
  • 1 cup Fontina cheese, shredded
  • 1 clove Garlic, halved
  • 1 cup Dry white wine
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 tablespoon Kirsch (cherry brandy) optional
  • to taste Salt and pepper

Instructions 

  1. 1. Rub the inside of a fondue pot with the halved garlic clove, then discard the garlic.
  2. 2. Add the wine and lemon juice to the pot and heat until steaming, but not boiling.
  3. 3. Gradually add the shredded cheeses, stirring constantly in a figure-eight motion until melted and smooth.
  4. 4. In a small bowl, mix the cornstarch with the Kirsch (if using) or a bit of water, then stir into the cheese mixture.
  5. 5. Continue to cook and stir until thickened, then season with salt and pepper to taste.
  6. 6. Serve immediately with bread cubes, vegetables, or other dippers of your choice.
