Ingredients 

Main Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup sugar
  • 6 bags Thai tea
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat until the sugar dissolves.
  2. 2. Add the Thai tea bags and let them steep for 10 minutes. Remove the tea bags and squeeze out any liquid.
  3. 3. In a mixing bowl, whisk the egg yolks. Slowly pour the warm cream mixture into the yolks, whisking constantly.
  4. 4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  5. 5. Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours.
  6. 6. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
  7. 7. Transfer the ice cream to a container and freeze until firm, about 2 hours.
