Ingredients 

Main Ingredients

  • 200 g rice noodles
  • 1 carrot, julienned
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup roasted peanuts, chopped

Dressing Ingredients

  • 3 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 red chili, finely chopped optional

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked noodles, carrot, cucumber, red bell pepper, cilantro, and mint.
  3. 3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, brown sugar, sesame oil, garlic, and red chili.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Garnish with chopped roasted peanuts before serving.
