Ingredients 

Salad Ingredients

  • 8 oz rice noodles cooked according to package instructions
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1 cup cucumber thinly sliced
  • ¼ cup cilantro chopped
  • ¼ cup green onions chopped

Peanut Sauce Ingredients

  • ¼ cup peanut butter creamy
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • 2 tablespoon water to thin the sauce

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large mixing bowl, combine the shredded carrots, red bell pepper, cucumber, cilantro, and green onions.
  3. 3. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, grated ginger, minced garlic, and water until smooth.
  4. 4. Add the cooked noodles to the vegetable mixture and pour the peanut sauce over the top. Toss everything together until well combined.
  5. 5. Serve the salad immediately or refrigerate for up to 2 days.
